Okay, anyone who has been to Chipotle knows their bowls are AMAZING. Seriously. Just take my word for it if you haven’t been. 😉 We unfortunately don’t have a Chipotle on the island (tears), so we had to come up with our own!
Every time we go back to the mainland we have to get it! But this recipe comes pretty dang close, and I love that it’s so flexible, you can add anything you want to it! Mexican is probably my favorite kind of food so this just really hits the spot, always.

Okay, okay let’s get to it! Basically for this recipe you’re going to make everything separate and then combine them in the bowl together at the end! I did beans, rice, sautéed veggies, guacamole, ground beef, tortilla, and some greens! You could add salsa, tortilla chips instead of the tortilla, anything you want.
